- 1 teaspoon garam masala

- Chat masala, to sprinkle later

- Oil

- Salt to taste


Instructions:

  1. Par boil the baby potatoes and cauliflower florets in a pan for about 10 minutes. Make sure they don't become too soft.

  2. In a bowl, whisk the curd until smooth. Add the deggi mirch, ginger garlic paste, kasuri methi, salt, coriander powder, gram flour, lemon juice, 1 teaspoon oil, and garam masala to the curd and mix well.

  3. Marinate the potatoes, cauliflower, and mushrooms (if using) in the batter. Also, add the onion and capsicum cubes to the mixture. Place the marinated vegetables in the fridge for 1.5-2 hours.

  4. After marinating, skewer the potatoes, cauliflower, mushrooms, capsicum, and onions.

  5. Brush some oil on the skewered vegetables and place them on a baking tray with a baking sheet at the bottom. Grill in your oven at 180 degrees Celsius for about 20 minutes or until cooked.

  6. Remove the veg platter from the oven and pour some lemon juice and chaat masala over it.

  7. Serve the veg platter with coriander mint chutney.
